GASP!

Yes, the Babe and I did it again. This time we had some teammates and some fans :)

It was one of the most challenging things I have ever endured thus far. The Spartan sprint was challenging but fun. The Super was just plain wacko, lol!! I feel like the obstacles aren’t the test its the course itself that breaks you. CLIMBING up the side of mountains and having the wind blow you to and fro is pretty narley don’t ya think? I’m proud to say that I completed all the obstacles. For the Sprint I didn’t stick the spear into the hay target and this time as exhausted as I was I landed it!! (pat on the back, thank you) I also had never climbed a rope. Id like to credit heyday for my upper body strength which allowed me to push through and ring the bell at the top. I have never in my life experienced the pain of muscle cramps as I did that day. It was excruciating. I got them at the end and had no idea what to do. Awful. It was an experience that I am glad I had. I got to see the limits that I could take my body to and what it could endure.

Road Trip

About two weeks ago we took a road trip with Melissa and Megan to visit our godson, Nicholas in New Mexico. The drive time was LONG but the company was pretty awesome so it evened out :)  

The food was AMAAAAAAAZAAAAAZING! We had a Wii dance off and got to see some awesome sights. We jumped on the tramway and went to an elevation of about 10,378 feet in about 2.7 miles to visit the Sandia Peak Ski area and take in the breathtaking view. Next time we are bringing our snow gear to really have some fun. We also went to the Rinconada Canyon Petroglyph National Monument. We got to see some prehistoric and historic petroglyphs. Right up Babes alley, right? Jessica and her family really showed us a great time in the (way to) short of a time that we had. We really enjoyed ourselves. We got to bring the little guy back with us to visit for a couple of weeks. Babes parents are taking him back on the train, how fun??!!

Carrot Protein Bars

For the past few mornings I have had a bar with my coffee. They are sweet, filling and packed with protein. The carrot taste is not prominent, they taste more cinnamony to me.

I got the recipe from Jamie Easons site but just added WAY less sweetner than recommended. I had some packets of Splenda lying around so used about six. I also added a bit more cinnamon.

Ingredients:

1 cup oat flour

2 scoops vanilla whey protein

2 tsp cinnamon (I used a lil extra)

1/2 tsp baking soda

1/4 tsp salt

1/8 tsp allspice

1/8 tsp nutmeg

4 egg whites

6 packets Splenda

8 oz baby food carrots

4 oz water

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
  3. Mix egg whites, Splenda,  baby food carrots and water  in a bowl.
  4. Add wet ingredients to dry ingredients and mix together.
  5. Spray glass pyrex dish with non-stick butter spray.
  6. Pour ingredients into dish.
  7. Bake 20-30 minutes.

FOOD PREP

The first few days of this week will consist of chicken, chicken and chicken. Slap me now! It was hectic and chicken is so easy. After baking peanut butter pies and oatmeal cookies for Babe it was time to get down to business. I made spicy crunchy baked chicken strips, baked “fried” drumettes, and marinated some chicken thighs for tonight’s grilled dinner. I also made some deviled eggs, veggies, mashed potatoes, carrot protein bars and baked some sweet potato slices.
